For those who think that apple juice is a kid's drink, think again. Apples and apple juice may be among the best foods that baby boomers and senior citizens could add to their diet, according to new research that demonstrates how apple products can help boost brain function similar to medication.

An old proverb attests to the health benefits of the fruit: "An apple a day keeps the doctor away." Research suggests that apples may reduce the risk of colon cancer, prostate cancer and lung cancer. Like many fruits, apples contain Vitamin C as well as a host of other antioxidant compounds, which may reduce the risk of cancer by preventing DNA damage. They may also help with heart disease, weight loss and controlling cholesterol, as they do not have any cholesterol, have fiber (which reduces cholesterol by preventing reabsorption), and are bulky for their caloric content like most fruits and vegetables.

Morton Salt is a United States company producing salt for food, water conditioning, industrial, agricultural, and road/highway use. The company began in Chicago, Illinois in 1848 as a small sales agency. In 1910, the business, which had by this time become both a manufacturer and a merchant of salt, was incorporated as the Morton Salt Company.

Morton Salt's hand-drawn logo features the "Morton Salt Girl," a young girl walking in the rain with an opened umbrella, and scattering salt behind her from a cylindrical container of table salt. The company's logo, developed in 1914, and its motto, "When it rains, it pours" (developed in 1911), were developed to illustrate the point that Morton Salt was free flowing, even in rainy weather.

If ever there was a truly romantic film created, for me it must be the BBC presentation of Jane Austin's Pride and Prejudice. I dare say there is no man finer to play the role than Mr. Colin Firth. And, although I now do have the luxury of several channels, they interest me little next to viewing the beauty and strength and righteousness of Mr. Fitzwilliam Darcy - chivalrous and magnificently presented in britches and tailed coats and top hat.

What I wouldn't give for 'an unexpected meeting at Pemberley' with Mr. Darcy.

Today, for the first time in 22 years of living in my beautiful apartment, I have cable tv !! Now, I didn't go crazy mind you ... I just have the basic. But, hey, who needs more than that. I actually was very happy without any cable at all -- I'm a PBS fan which I accessed through 'rabbit ears' and frankly, I didn't need any more tv than that. However, the offer only increased my monthly bill by a little over $10, so after 10 years with my last internet service provider - and no cable, I switched.

The internet is extremely important to me because each month I email my animation announcing First Friday to over 1,500 recipients. So, changing my email was a bit of a bold move. Naturally, I'm hoping for a smooth adjustment period. My second email address: info@annelizabethschlegel.com will continue as normal.

Incidentally, the customer service of RCN was superior.

Gosh, isn't it puzzling how you can be ok one day - or even several days - and then you can't stop the tears for days. It's so unbearable without the ability to call my Mom. Without knowing if she's somewhere ... if she sees how much we miss her and love her.

My Mom was the most thoughtful person I know.

You'd always receive your birthday card on your birthday or the day before - she'd always make sure to time it perfectly. She'd underline special words that were printed on the cards and always sign it 'We love you - Love Mother and Dad'. She'd always pull your earlobe to coincide with the birthday year and give another tug - one for good luck - and one to grow.

She'd place a hot water bottle under your covers to keep you warm.

She'd get up early to bake breakfast cake.

My Mom darned all of our socks.

She could wrap a package more beautifully than Martha Stewart.

She and my Father took walks every day.

She was sad if you were sad and happy when you were happy.

She loved her family.

She always packed the picnic basket with extra food.

She was cute with my Father -- she'd kid him and give him a friendly tug.

When visiting my niece at College, if she couldn't find a parking place, she'd drive back home, park, and walk back to the College with little gifts, snacks and always, always a hand written note.

She wrote to me a hundred times when I lived in Cape May and, thank God, I saved all of her letters.

She was smart and funny and loving and kind and thoughtful. I'd do anything to have her back. I miss her every moment.

Well, I finally found it! I found the enamel cast iron covered casserole that I've been searching for. I also found a round 3 quart covered casserole to complete the 'look' and cooking needs on my stove and in my oven. To celebrate my new purchases, I cooked a pot roast dinner -- complete with onions, carrots and potatoes ... yummy !!!! I also added a bit of porter beer since I didn't have any wine to douse.

So, here is my pretty dining room. The tablecloth is from Williams Sonoma. It's entitled 'Provence', but it's really made in India. And since I'm planning my exhibition in the French Riviera this July, I thought I'd treat myself to it.

To me, there's nothing better than a beautiful place setting, wonderful soulful music and a delicious meal with an alluring aroma. Bon Appétit !!!

Well today I picked up my friends Sharon and Dave from their Belgian tour. They loved the medieval city of Bruges -- drank incredible beer, ate Moules Frites and strolled along with cobble stoned streets and meandering canals. Man, nothin' better than that !!

The classical way to cook mussels is Moules Marinières. This does not mean "marinated" but "sailor style". I don't know why steaming them in white wine, garlic and shallots is typical of sailors, but there you are. And this is the best part. If you ever eat mussels, heed this piece of advice: the sauce left at the bottom of the pot is the most delectable thing you will ever taste. You may need to tip the pot to get a deep layer of juice, because there will probably be sand and you want to let it sink to the bottom. Dip your fries in it, ask for more bread, or just do what I do: use the spoon and make like it's soup. But whatever you do, do not waste this delicious sauce.

Moules Marinières

3 pounds of fresh mussels, scrubbed as well as you can and beards removed
1/2 bottle of dry white wine
3-4 shallots, finely minced
2 cloves of garlic, pressed
1/2 cup parsley
1/2 cup crème fraîche

Put the wine, garlic and shallots in a deep pot and bring to a boil. Let boil for a couple of minutes to cook the shallots and garlic and then add the washed mussels. It's impossible to scrub them too much - inevitably you will get some sand in the finished product. A sad fact, but here's a tip: "washing" the cooked mussels by swirling them in the sauce at the bottom of the pot while eating will get rid of much if not all of the residue sand. I digress. Cover the pot tightly and cook for about ten or fifteen minutes. If you have a glass lid, you can see when the mussels open and leave them on the heat for a few minutes more. Put the mussels in serving bowls. Mix the crème fraîche and chopped parsley with the remaining sauce, strain it and pour it over the mussels. Serve with lots of bread and (if you are not dieting) fries. Oh, forget the dieting ... go for the frites as well !!!

My Garden

My Garden

Today there is a peek into spring. The temperature on my gage reads almost 70 degrees. So .... I unearthed the garden tools, raked through the soil, swept up the debris and filled up three large trash bags.

This is a photo from last year's garden. I'm looking into testing the soil to properly propagate herbs in abundance ... I receive intense southern exposure and am appreciative of any tips from you 'garden gurus' and 'herbalists' that I might receive.

I love the fury of the gardeners in springtime ... the passion of planning and planting their gardens ... herbs and flowers and vines and vegetables and fruits ...

And today, with the peek into spring, I also am sensing the need to grow ....

The center of diversity of the genus Malus is the eastern Turkey, southwestern Russia region of Asia Minor. The apple tree was perhaps the earliest tree to be cultivated, and their fruits were improved through selection over a period of thousands of years by early farmers. Alexander the Great is credited with finding dwarfed apples in Asia Minor in 300 BC; those he brought back to Greece might have been the progenitors of dwarfing rootstocks. Apples were brought to North America with colonists in the 1600s, and the first apple orchard on this continent was said to be near Boston in 1625.

Winter apples, picked in late autumn and stored just above freezing, have been an important food in Asia and Europe for millennia, as well as in Argentina and in the United States since the arrival of Europeans. In the 1900s, irrigation projects in Washington state began and allowed the development of the multi-billion dollar fruit industry, of which the apple is the leading species.
