Happy Birthday Karen ! My sister turns 59 today !

So ... we are going to celebrate with dinner at the wonderful Mexican Restaurant in Bethlehem, PA - 'Cactus Blue'. Cactus Blue features a fun yet intimate atmosphere with an old world feel ... from the yellow rag painted walls to the hand made benches to the original oil paintings (supplied by yours truly) to the spirited Mexican music filling the air. If you ever want the most delicious comfort food with generous portion size and bursts of fresh flavor, Cactus Blue it is. I always go with the intention of trying something new, but I usually go with my favorite 'Fajita Blue'. Fajita Blue is a steak and shrimp combo (if ordered that way) served with lettuce, cheese, rajas, guacamole, pico de gallo, sour cream, flour or corn tortillas. It's mouth watering for SURE !!!

And Cactus Blue is BYOB so bring along your favorite 'Cervezas' or Margaritas for an extra good time. Oh .. did I mention that Cactus Blue was awarded 'Best of the Valley - Best Mexican Restaurant' 2005, 2006, 2007 and 2008 and 'Decadent Dish' in 2006 and 2007. Pretty incredible. Reservations suggested.
